So in my attempt to go gluten-free to help my bloat that refuses to go away, I found this awesome recipe for chocolate chip cookie squares. Just because we’re on a strict diet, doesn’t mean we can’t enjoy what we eat!
2 ½ cups almond flour
½ teaspoon salt
½ teaspoon baking soda
⅓ cup coconut oil, melted
2 eggs
1 tablespoon honey
2 tablespoons coconut sugar
1 teaspoon vanilla
1 cup chocolate chips
In a bowl, combine dry ingredients. In a second bowl, combine wet ingredients. Pour the wet ingredients into the dry and mix until thoroughly combined. Stir in the chocolate chips.
Place dough on parchment paper atop a baking sheet or stone. Form dough with your hands into a circle or square.
Bake at 350°F for about 20 minutes, until golden brown. Let the large cookie cool for about 10-15 minutes and cut into squares.

Going to have to try this. It sounds so easy. Coconut sugar i haven`t heard of. Probably haven`t been searching in the right places. By vanilla I presume you mean vanilla essence. There is artificial vanilla on the market which is best avoided.
Most gluten free baked goods taste like dog food to me. Are these different?
They taste good to me! The texture is more like a muffin than a cookie, but still yummy!

Those look delicious! My wife and most of her siblings are celiac, or have a gluten intolerance. I started going gluten-free when we started dating. Since then, we’ve had a lot of fun in the kitchen, cooking various gluten-free recipes. Among our favorites is the gluten-free vegetable lasagna and homemade pizza with a gluten-free crust. I think we’ll have to add this recipe to our kitchen adventures. Thanks for this one!

I actually used butter instead of coconut oil and regular sugar instead of coconut sugar. Though you should be able to find both at the grocery store!

Yes, I didn’t use coconut oil or coconut sugar- I used butter instead of oil and regular sugar instead of coconut.
Congrats on being freshly pressed…and on a winning recipe. A lot of gluten free recipes seem to have so many ingredients. This looks simple…and delicious!

I actually don’t know either of those places, but I found almond meal flour at my local grocery store. You could also try coconut flour!

I am definitely going to try these. I love that they aren’t loaded with sugar and just have a little sweetness from the chocolate chips and honey. Thanks for the recipe – I’m always looking for new gluten-free desserts to serve at parties.
I’ve just put this in the oven… here’s hoping to having a yummy treat! I used olive oil instead of coconut oil. That’s all I changed.
